Free Seafood Culinary Education Workshop

The Department of Human Nutrition, Food and Animal Science, CTAHR is hosting:

Seafood Culinary Education Workshop by The National Aquaculture Association (NAA)

This workshop, designed specifically for future chefs and food professionals, provides an overview of U.S. aquaculture including methods of production, sustainability, feeds, environmental impacts, common and emerging species, food safety concerns, third party certification programs, seafood inspection programs, new technologies, and important health benefits of increased seafood consumption. This information is critical to dispel some of the misinformation and disinformation that swirls around aquaculture production. It is an opportunity to provide science-based answers to your questions.

Parking (in the structure, lower UH Mänoa Campus) and coffee breaks will be provided.

Speaker Linda ODierno has over 25 years of experience working with the fish and seafood industry and is currently the Outreach Specialist for the National Aquaculture Association. Prior to that, she served as Coordinator of Fish and Seafood Development for the New Jersey Department of Agriculture and was a Regional Seafood Specialist with New York Sea Grant. To learn more about consumer perceptions and concerns, she has worked with the National Fisheries Institute, Sea Grant, and USDA on the development of consumer surveys and focus groups. Linda has been an instructor in retail training programs including those conducted by the New England Fisheries Development Association, the National Marine Fisheries Service, the Mid-Atlantic Fisheries Development Foundation as well as working directly with major supermarket chains.
