Course Description: CULN 112 is the study and application of the
principles and procedures of sanitation and safety in the hospitality industry. Includes the study of food borne illnesses, biological, chemical, and physical hazards, and cross-contamination as they may occur during the flow of food. An introduction to HACCP (Hazard Analysis Critical Control Point) and other
sanitation and safety programs will also be presented. Safety issues and OSHA (Occupational Safety and Health Administration) guidelines and standards will be covered as they apply to the hospitality industry.
Textbooks: Books may be purchased at the Kapiolani Community College bookstore or ordered online at http://www.bookstore.hawaii.edu/uhkcc/home.aspx. If you do not have access to the Internet or unable to travel to the bookstore, you may also order by phone at 1-800-UHBOOKS
Technical Requirements: *Must be an Oceanic Time Warner Cable subscriber. UHTV programming is not available on satellite TV systems.

*Oceanic Time Warner Cable Digital TV subscribers may view UHTV programming on channel 355.

*Oceanic Time Warner Cable Digital TV subscribers may also view state-wide cable classes on the UH VOD channel 358. Must have a digital cable box to access VOD channel.

*Oceanic Time Warner Cable Standard or Basic TV subscribers
-that own an HD Television with a QAM tuner, may view UHTV programming on channel 46.55 (27.55 for Maui County).
-that do not have an HD Television, may contact the Oceanic Cable Customer Service Center at (808) 643-2100 to find out how to get a digital cable box free of charge for so long as you maintain your existing analog service subscription. Some restrictions apply.

Online Component
Course may also include an online component. Familiarity with using a computer and basic Internet skills (browsing, sending e-mail, saving/sending files) is required. Students must have a computer with Internet access and a UH email account. Check with your instructor for more information.
