He teaches us a lot of his past experiences

He is easy to talk to and personable. Even if it is not class related, he is knowledgeable in many areas and willing too share what he knows with his students.
He knows such many things.
He has a strong experience about "Dining room". NO! I should say that a strong experience about how to build a restaurant, operate a restaurant, and make sure it is making profit. This is exactly what I can see in the class with "my eyes". I do read people, however, after the training with Mr. Chau, now I can read more, and bring myself to the next level. On the skill side, I have had a much better understanding about running a restaurant.
His knowledge and experience
I believe Mr. Chau's strengths as a teacher is that he truly cares for each of his students. He shows no favoritism, and he goes out of his way to try to help you with any situation, even if it has nothing to do with his class. Also, he truly knows his subject matter, and is always trying to better himself with the subject, by always reading or taking new courses to better himself as a teacher. I truly enjoyed every minute of his class. He is a well rounded individual. I believe Mr. Chau truly loves his job as a teacher and it probably gives him so much fulfillment, and I can tell he enjoys himself everyday, he is constantly smiling and laughing! I believe Mr. Chau can have any job on this planet, but yet he choses to have a teaching job here at KCC, that is definitely a treat for us students.
He is clear, concise, and fair. Mr. Chau tells us from the beginning what is expected of us and he follows through on those expectations.
He really know about hospitality and dinning room services, he taught us more than the subject in class. He taught and told us some stuff based on his experience that i never even think about it, which is really useful in this industry.

Mr.Chaus strengths as a teacher was to keep everyone in check and made every lesson fun and interesting with all the life lessons and stories he told.

He's extremely knowledgeable about all things regarding front of the house procedures and dining room service, amongst other things. He does a great job at teaching and showing students how they should conduct themselves in the dining room.

Do NOT push yourself too hard to teach these ordinary people. They would NOT get it!!! This is why the majority of people in the world can only make $20,000 to $30,000 a year and they still complain the world is not fair, which most of my classmates are going to be like that in the future. They are not willing to get their hands into dirty to find the gold. Then, Mr. Chau, you can do nothing. For those of us climbing to the top of the food chain, there can be no mercy. There is but one rule: hunt or be hunted. If they already choose to be hunted, all I need to do is to enjoy the process of hunting.

If there were to be changes, I would suggest to have his class the whole semester! He has so much life experiences and dining / restaurant knowledge that 8 weeks is not enough! I admire him as a human being.
I think that he should make marks against those who are late. I understand not wanting to embarrass them, but to those who are on time, it is disrespectful.

he never gave up on the students that gave him a hard time
He constantly shows it in so many ways. If he sees us doing something wrong in the set up he hints to us there may be something wrong without telling us what exactly it is... he wants us to think for ourselves. During live service, he will never make you feel uncomfortable or look foolish in front of any guests. For example when open wine in front of customers, he is right there to lend a hand, and always doing in a very professional way of teaching. Also, if you have a problem or concern outside of his subject matter, he will unselfishly help you and if he doesn't know the answer, he will definitely go out of his way to find out for you. I believe he is a teacher that will keep in touch with his students, and even 10 years from now if you should seek his help, I trust that he will definitely help you out.

I could not come to class and really worry about my grade, and he told me about school activity that me or other student can attend for extra credit, which is really helpfull for my grade.

I do recommend Mr. Chau to students, however, I will only recommend those people who have IQ, who are smart, who use their brain to think, at least a normal person. On the other hand, I would not recommend those ordinary students because I do not want to send the shit to Mr. Chau.

I would highly recommend Mr. Chau to any student needing to take dining room course. I myself made it a point to take it directly from him, and made my schedule on purpose to fit him in. I recommend him of all the great reasons I stated above. He is a reason why the culinary program at KCC is so successful.
Of course, I would recommend Mr. Chau. I learned so much in this class and have been able to relate that to others. He made the course interesting and fun. I believe that Mr. Chau is a KCC treasure and should be required for ever student.

First of all, I want to make it clear that I do ecafe not because of extra credit, or even my classmates, I would not concern their dead or alive. I think that I just kidnapped 18 x 20 = 360 points, which could be my leverage to negotiate with my classmates to make "extra extra" point from these 360 points. I do can resell these points to cash out. It sounds funny, but this is how the business works. Life likes to play chess, however, the goal is not alway to find the way to win, sometimes you should know how to lose, and how to draw the game. I just want to thank Mr. Chau for a great 8 weeks. I can honestly say I thoroughly enjoyed each and every minute of his class. I have learned so much about the dining room, food, wine, but what I will take away most is all his stories and tips on life itself. He fully exceeded his syllabus on dining room!

Kind caring and very knowledgable
Mr. Chau has many strengths as a teacher. he is very straight forward and helps students when in need of help. He is also very charismatic which can boost moral of the students. His approach to teaching is very hands on, and his live demonstrations of table side service was very useful in learning in this class
The way Mr. Chau taught his students you just knew that he was very knowledgable in his field. He always tried to make class fun and interesting and always tried to add his personal experiences to his lessons to help get his message across. he always looked out for the students best interest and is a great teacher.
Mr. Chau was the best teacher ever. Extremely understanding and great personality. Responded to emails very quickly.
As a teacher he knew exactly what he was doing and had so much knowledge about front of the house and customer service. He encourages students to participate and think for themselves. Although, he is strict and not as nice as other teachers I actually prefer it that way because you learn more and you learn independence.
He corrects you on your mistakes, and gives you the opportunity to perfect it before he minus' points.
As a teacher, he teaches in a way that is engaging, and this really important for us that, English is our second or third language. For me, I have great learning experience with him, because he has tons of knowledge in the Hotel and food service industry. I have seen a lot of negative situations between the back of the house and front of the house, but he manage to fix it calmly and efficiently, and it think that was great.

Being that he had over 20 years of experience in the hospitality industry, Mr chau clearly explained and demonstrated all sorts of proper techniques on what is to be expected as the standard in this type of field. Not only that but he also grabs the attention of every student through his teaching methods, by far one of the best teachers I've had.

Always helping us when needed
He was understanding for students who were sick or had other emergencies outside of class. He would always point out your flaws and shows you how to fix it.
he would always use encouraging words. when guest at Ka Ikena would be rude or disrespectful, he always took our side.

He first watches over us but will let us know if were doing something wrong, that way we can learn through experience. He always emailed us reminders about quizzes and field trips as well.
He always made sure I knew what was going on.
By announcing the to the class quiz's and assignment's due dates to make sure we don't forget. He also teaches and show us how to treat guests the right way and the little mistakes that we made with silverware presentations, etc to remind us not to repeat it again.

Whenever we need help he would show us over and over again. No matter how long it took us to learn , he wouldn't move on into everyone understood
when a student is not doing well or make a mistake, he always try to correct he/she or encouage the student to retry.
If he see's something done incorrectly. He not only corrects you. But explains why and how to Do it better. Also he looks out for safety of the students before anything else.
He would always ask about absent students were ok and would always be updated on the well being of the student or is always curious of the well being of the students

i would definitely recommend Mr. Chau's class to other students. his class is so interesting and he is very good at what he does. he actually knows what he is talking about because he has experienced it first hand in the industry.

Yes. I was recommended to him and I'm glad I was able to take this class. As a returning student from a prior career I have learned much from mr. Chau. I feel confident that I can go forward to train and to be a server anywhere. The high expectations of mr chau enables is to do our best. Beside service, I learned more about working hard and doing everything at your best and try to go beyond expectations. Great class. Won't forget it.
I would recommend this to all students that are going into the culinarian hospitality field because Mr. Chau is a teacher like no other he engages everyone regrets everyone's attention while teaching and also he cares about each of his students. Also he has many years of experience in the hospitality and culinary field which makes him a very knowledgeable person to learn from.

He is one of the better teachers ive ever had while going to school. his approach to teaching is very easy for me to comprehend and the knowledge that he taught us ws better than any lecture class bar none.
the only thing i might change is maybe he shouldn't talk about his personal life so much. i understand that he has had an amazing life and he just wants to share it with his students, however i do think that his life stories take up a lot of class time.

A small problem i had throughout the semester what when he would let his students who had taken his class before just walk in during class time and interrupt our class. there were a couple of times in the beginning where a student from his other class would walk in and interrupt the class. i found that since Mr. Chau wouldn't say anything to the student and actually would have conversations with this student during class time very distracting. i feel that as the teacher the responsible thing he should've done was politely ask the student to leave since he was in the middle of class. i go to class and pay tuition to learn, not listen to Mr.Chau and this other student talk about stuff for their next class. I also found it really distracting how he would let the Cost Control people in and let them do whatever they wanted during service. They would distract some of my classmates, eat the bread that were for the guest during service, and would drink all the beverages. i know Cost Control have to be there to process payment, but it doesn't take 5 or 6 guys (and the same guys) to cash out a couple of checks. I felt that it was very distracting having so many people just standing about not doing anything.
