UHMC Maui culinary students invite you to 'Outings'

KAHULUI, Hawai'i – You’ve had fruit salad, but have you ever had compressed fruit salad? If you’re curious about what fruit tastes like after it’s been placed in a vacuum chamber (hint, it’s smoother and increases flavor), then you won’t want to miss ‘Outings,’ UHMC Maui Culinary Academy’s modern spin on traditional food favorites. Students in the College’s CULN 240 class were inspired to create a nouveau menu based on events where one might grab a bite, like “Backyard BBQ”, and “Camping in the Great Outdoors.” Thus the Deviled Egg is transformed into a “Deviled Egg” Savory merengue with a soft poached yolk, and horseradish Dijon remoulade.

Wait until you’ve seen what they’ve done with funnel cake.

"This very exclusive F&B event triples in purpose,” said MCA program coordinator Dean Louie. “It provides an important assessment tool for MCA instructors to gage student knowledge. Secondly it provides a venue for MCA students to professionally showcase talent, skills and culinary creativity at a great value to the public. Thirdly the event offers the MCA to perpetuate and demonstrate quality culinary education only on Maui."

MCA student Lindsay Hunt is eager to present their creative menu to the community. “This is a wonderful opportunity for myself and my classmates to express ourselves creatively through the food we will prepare,” said Hunt. “The process of creating a unique menu that will excite our guests has been intense, but I have no doubt that our hard work will be more than worth it when we get to see our ideas come to fruition on the plates of all who attend."

Cost is $40/person, and those interested in taking part in ‘Outings’ must pre-pay to reserve a spot by calling Mika at (808) 984-3367. Space is limited to 100 guests. The event will take place November 21st, from 5pm-7pm in the Pa'ina Building, Leis Family Class Act Restaurant. There will be a cash bar where one can purchase beer and wine (ice water, tea and coffee will be included in meal price).
