PAPAYA SEED DRESSING

Ingredients:
1/8 teaspoon salt
2 ripe papayas
1/8 cup fresh lime juice
1/2 teaspoon dijon mustard
1 shallot, finely chopped
1/4 teaspoon salt
Procedure:
Peel and seed papaya. Puree papaya in a food processor or blender.
Add all remaining ingredients and blend until smooth. Makes eight
servings.
