     4                        dried mushrooms, soaked
     1/2 lb                   shrimp
     1 lb                     ground pork
     1/4 cup                  minced water chestnuts
     1/4 cup                  green onions
     1                        egg
     2 tablespoons            cornstarch
     2 teaspoons              salt
     1 teaspoon               soy sauce
     1 teaspoon               sugar
     1/4 teaspoon             sesame oil
     Dash                     pepper
     1 pkg (1 lb)             siu mai or won ton wrappers

Remove stems from mushrooms; mince caps. Clean and shell shrimp; mince. Combine all ingredients except siu mai wrappers. Place 1 tablespoon of pork mixture in center of each wrapper. Moisten and gather edges of wrapper around filling, leaving tops open and shaping corners to form petals. Place on a greased rack and steam 20 minuites. Makes about 4 1/2 dozen.
