Food Safety

Which is more likely to make you sick, cooked rice or a jar of mayonnaise? Surprise! The answer is cooked rice, which should be refrigerated. Most store-bought mayonnaise actually retards bacteria growth.

University of Hawaii Nutrition Specialist Joda Derrickson says between seven and 33 million Americans are made ill by food each year.

Here's a few more safety tips for you and your family:

* Store highly-perishable foods like milk inside your refrigerator, not in the door.

* Got a cloudy liquid around your hot dogs? Trash them. It's a sign ofbacteria. And if you're not using raw hamburger right away, freeze it. Defrost it later in the microwave or refrigerator-not on the kitchen counter.

* Think canned food last forever? Wrong. High-acid foods like canned tomatoes should be tossed out after a year; other canned foods last about two years. Any can that's bulging or that spurts liquid when opened should also be tossed.
