The different kinds of fruit juices

 

You're standing in the juice aisle at the supermarket and you see the following labels on juice containers: unpasteurized, pasteurized and fresh.

Do you know what the labels mean? University of Hawaii Food Technology Specialist Aurora Hodgson says juice is labeled unpasteurized when was not heated to at least 160 degrees Fahrenheit to kill bacteria like E Coli. But, the juice is more fresh. Pasteurized means the juice was heated above 160 degrees.

When you see a juice container labeled fresh, it means that no heat was applied to the juice.

Choose pasteurized juices over unpasteurized, says Hodgson. In other words, buy juices that have been heated in the preparation process. It should say so on the container.

If you make your own juice, use only whole, and healthy fruits. Make sure you wash your hands and the fruits before you extract the juice. For added safety, heat the juice to boiling and chill before serving.
