Crown Prince Akihito Scholarship Lecture with Benjamin Schrager

Benjamin Schrager is a PhD Candidate in Geography (UH Manoa) and past recipient of the Crown Prince Akihito Scholarship.

Over the past half-century, Japanese chicken meat consumption increased six times over. In 2012, chicken surpassed pork to become Japan's most widely consumed animal meat. Mr. Schrager will present on his research with Japanese chicken meat and reveal how the tension between consumer anxiety and trust is reshaping food systems in the Global North.
